As I write this, I'm chomping down on a caramelized onion infused English Cheddar, with cinnamon and sugar caramelized apples, on a sprouted wheat berry bread.

And I have to say that there is a art to fine grilled cheese sandwiches.

I find that these are awesome ingredients to said sandwich:
Smoked gouda
Caramelized Onion English Cheddar
Fried eggs
Harissa
Caramelized Onions
Caramelized Apples
Caramelized Pears
Stone Ground Mustard
Balsamic

Anyone else share my passion?

I made one last week consisting of:

Simple whole wheat bread
Spinach
Roasted garlic
Stilton and aged cheddar, mixed
With a dash of salt and pepper
Fried using sundried tomato oil

It was delicious.

Those both sound mouth-watering. Usually when I make grilled cheese I try to use bread fresh out of my bread machine, usually some variant on French-style. I use a 3-cheese blend usually mozzarella, asiago and parmigiano-reggiano with parsley and tomatoes. Then I put it in my panini press with olive oil to give it a golden finish.

i remember making "the poor mans grilled cheese" in collage.
2 pieces of toast buttered with a kraft single sandwiched in between then microwaved for 15 sec.

some days it was just ketchup sandwiches for me...

Cheep way to do panini at home if you have two cast iron pans:

heat both of the pans up until nice and hot, flip one upside down, place what you wanna panini on top place the other pan on top!

you don't get the nice fancy grill marks but the taste is all there .... *drools*

I have one. They suck.

Try a waffle iron. Spray the bread with non-stick spray first.

It makes for a really nice golden brown "waffle" crust that is super tasty and much better than a panini press. This one is a little dark but its the right idea:



You can also throw some grated cheese into the grooves before you put the sandwich in, making it a crunchy CHEESY crust. its a mouthgasm!
