I feel like I'm coming late to the party....
Anyways, my preferred film is Kodak 400BWCN, available at Wallgreens of all places. It's a chromogenic black and white film with very little grain when properly exposed. As for exposure, with an aperture of f2.8, I average around fifteen seconds in moderately dark places. Granted for really quality shots you'll want a significantly more narrow aperture, around f8 - f16, depending on your lens. For those, expect to sit tight for a few minutes.
