Social Engineering is the skill (or art, depending) on making people believe what you say.

If you've seen the movie Hackers (who hasn't?), what Dade does to Ed, the Night Watchman at the TV Station (asks him for the phone number of the station's modem) is a classic example of Social Engineering.

Other terms for Social Engineering are: Social (as in.. "We really socialed that guy", SE, Soched (as in... "We really soched him good").
