After sacks of grain were weighed, they were emptied into a bin at the rear of the ground floor. The grain would then go down a chute to the cleaner (which you see here) in the basement. The dirt and chaff would be removed by this machine and the clean grain would then be moved by elevator to the ground floor and discharged into the millstone where it was ground into flour.
