  Also strange because a vaulted or semicircular roof is very strong (principle of the arch) - but not if the roof is not in one (semi)circular piece...

  Yes it was, but there were no big gaps to the underlying floors.

  There was a brewing process where the hops or so were left to "ripe" in a shallow copper basin in the attic of the brewere - the yeast wouls come in from natural airflow and/or from the wooden roofbeams. This required attics with not a lot of light but a lot of airflow, to prevent other molds from happening.

I don't knwo the exact process anymore and can't find it.

  Ah found it. It's Lambic beer or http://en.wikipedia.org/wiki/Lambic - I don't know whether this brewery did create this beer though.

  I couldn't find how Das was made... but it make sense that it was used for this.
