Posted by IIVQ 10/8/2008 7:20 PM | remove   There was a brewing process where the hops or so were left to "ripe" in a shallow copper basin in the attic of the brewere - the yeast wouls come in from natural airflow and/or from the wooden roofbeams. This required attics with not a lot of light but a lot of airflow, to prevent other molds from happening. I don't knwo the exact process anymore and can't find it.
