Yep, as the filename.
This is the central 'sluice' which often pours into a vaccum powered 'collection bottle' - the contents of which can be analysed for abnormalities.
Sometimes they just lead to the waste system with a grate to catch anything too large to flush.

Actually I meant re-covery... But re-overy sounds a lot more gynacilogical, so maybe it was best first way around.

I still think these would make a fine island for a kitchen. Just rinse all the wast down the middle. Roast a little rare? let it drip down the table!

Equipment like this is normally VERY well sterilised when closing a hospital. Well, in the UK anyways - I would think the US/N.E would be the same.
Just after it was cleaned - you COULD eat your dinner off it...

I honestly don't think they would NOT clean it after it's final use. It's probably water/rust.
