  1. there were sheep in the neigborhood, about 20 (19 alive, 1 dead)
2. Sheep and goats are the only animals that are about this size and in a field, and goats are way narrower (sheep lie on their belly, goats on their side: they tip over otherwise)
3. We've had sheep, and we've eaten sheep head (that is: soup from it) so I recognized the skull shape

  There was a pheasent on the side of the highway near my place that was there (and probably still is) or months, but it was so flattended that it didn't seem to decompose and I could only tell what it was from the feathers as we drove by.
